Week 7 practicing week 8 & 9 this is my first stab at creating the Salade Nicoise au Saumon..

The past few weeks have been alot harder and the cooking has stepped up a notch or two.One thing for sure is it has been fun. As we get closer to our practical for week 9 I realized I have to step it up and practice alot. So here is my first try at the Nicoise salad with Salmon. I wish I would have slanted the fish differant with the egg above it but never the less it came out good and the plate is clean.Hope you all enjoy it. John...

Week 5 - Roast week

I found that roasting a chicken was fairly easy untill it comes time to get the temp in order for the meat to be perfect.I had fun doing it and it was a fun week in class other than my horrible idea for a presentation.I guess that is how we learn.Have a good week and I will see you all on thursday...John.

week 4 Frying...

Week Three rice week(Risotto)









I feel like I learned alot in my last Culinary Foundations lab. The group I was in worked together well and that was a plus. My homework this week was to make a risotto at home so off to WholeFoods I went to get to get the supplies I needed. The risotto I did was alot like the one we did in class minus the broth and the pea sprouts. In my dish I sauteed two differant types of mushrooms Button and Shataki with Garlic.Then followed all the steps that were in my head from the other day in class. I think it turned out pretty good!I served it with grilled chicken and a medley of stirfried veggies.My family really liked it and that is what pleases me.Hope you like it,John...

Week Two Grilling..

It seems that everything went well in the kitchen for the most part.Then it came time for me to grill my steak, something I had done before.I under cooked it and was not happy with my work! I feel that sometimes I forget to take my time at things, I forget that im here to learn new things. So aside from not being as prepared as I could of been everything else seemed to go well. I had good people on my team and that is always a plus. See you next week...

The French Omelet

At first I was having trouble with getting this omelet right. Ive always cooked omelets the american way so it took me a few tries to get it right. In my omelet I added grilled chicken,wild muchrooms, avocado and attempted to make a hollandaise that I found in our textbook. My egg did not brown and was fully cooked.
